Bacon-Wrapped Pesto Chicken

On Thursday I saw a video on Buzzfeed Blue for Bacon-Wrapped Pesto Chicken. Of course I immediately shared it on Facebook with the Hubster with the caption “Brian – We need to make this! This weekend!” To which hey replied, “Okay!” Brian is a huge bacon lover so I wasn’t surprised by his response but what surprised me is how excited I was to make and eat this. Watch the video and tell me you are not as excited. I wouldn’t believe you if you say you don’t want to try it. Watch!

So, now that you’ve seen the video you surely must understand why I had to make this. As the wife of a bacon lover I had to make it for the man I love. Pure and simple. He was so cute too. When we woke up Saturday morning he told me that we needed to go to Trader Joe’s to buy fresh basil. I asked him why and he pointed to the kitchen counter. He had already taken the bacon and the chicken breasts out of the freezer to defrost. Too cute. He was excited to try this dish and I was not about to disappoint him. I quickly informed him that I already had homemade pesto in the freezer which he promptly took out to defrost with the chicken and bacon.

So, we ran our errands for the day and later that evening I began to assemble, with Brian right by my side ready and willing to assist. He actually gets the photo credit for all of the prep photos. We started by laying out the bacon strips. Then we put the chicken on top of the bacon and cut a slit in the chicken.

Then we inserted the pesto into the slit and topped it off with cheese.

Then we wrapped the bacon around the chicken breast and put them in the pan.

Once the chicken was in the oven and the sides (corn on the cob and baked potatoes) were cooking there was nothing else to do…but drink.

We ended up making one chicken breast for the kids without pesto (cause you know, green stuff – yuk!) and instead substituted salami. Brilliant, no? We thought so. Here’s the finished product fresh out of the oven.

Summary: Bacon wrapped chicken is a hit with the family. We will make this again!

Dinner turned out to be a huge success. Everyone loved it. I highly recommend trying this. The only thing that I might do differently next time is to cook the chicken on a rack so that the bacon is crispy all the way around instead of just on the top and sides. Also, the cheese mostly oozed out of the sides during cooking so I will probably try chunked mozzarella next time. All in all it turned out great though and everyone said that they want to have this meal again.
